I use Walkerswood Jerk Seasoning.. it is the best that I have found. I buy it at a speciality store that sells mostly hot sauces but you can buy it online. I like it the best and I have tried quite a few. Hope you enjoy!

Coming from a Jamaican boy.....I could show you how to make impeccable Jerk chicken!!
I use only chicken breast cause thats what I like but you should use that or a fryer!! The day before you cook it, season it up with lemon juice,thyme,allspice and beer.(preferably Red Stripe or Heineken)I measure all seasonings by eye.......so I don't know the exact measurements.
Next day I use a rub(Cinnamon,brown sugar,garlic powder,ginger,sage,white pepper,soy sauce,ketchup and Jalapeno paste or chopped up jalapeno)
I usually put mine on the grill....with some scotch bonnet peppers,yellow onions with a lime and a little sprinkle of rum. You could do the same in the oven. If using in the oven,cook it skin down.
I always cook it on the top rack and on the bottom rack I take a small pie pan and fill it with water,vinegar and sugar to keep everything moist.
Do any Jamaicans or other Carribeans (or family members of Jamaicans/Carribeans) have an authentic Jerk Chicken recipe?? I know I cannot cook it in the true jamaican style with an outdoor grill but what is the next best thing?
I have tried looking on google but have only come up with Americanized versions.
