I like to make Turkey a la King. I just use the basic chicken recipe and substitute turkey. This is fast.

Another fave at my house is to take leftover gravy, thin it out with milk, add in some turkey pieces, and serve over angel hair pasta. This is also fast.

Leftover mashed potatoes have been trying to turn into potato pancakes at my house for years, but I just can't seem to get that one right........

Yep yep Lacey that is how I usually roll. When I make up pie crust for our holiday pies I always make extra to make pot pie! Quick dumping for such a filling feast.

Smile Recipes for T-day Left-overs

How do you use all those left-overs? Here's mine for the turkey ...

California Chili From Leftovers (AKA Baja Buzzard!)
1/2 to 1 cup chopped green bell pepper
1/2 to 1 cup chopped onion
2 cloves garlic -- minced
28 ounces stewed tomatoes, not drained
3 cup turkey -- cooked and cubed
1 tablespoon chili powder
1 tablespoon cilantro -- (or 1 teaspoon coriander)
1 teaspoon crushed red pepper
1/8 teaspoon hot sauce, or more
A splash of red wine
Optional: (depends on how many people you want to feed)
14 to 28 ounces kidney beans, drained and rinsed
14 ounces corn, rinsed and drained
Oil or spray the crock pot. Throw it all in a crock pot, give it a stir, and cook on low for a minimum of 4 hours, maximum 8 hours. My crock pot is an oldie, it doesn't cook real hot like the newer ones. Toppings : Shredded cheese, sour cream, chopped white onion or green onion, jalapenos, etc.

Baked Chilies Rellenos
1 pound whole green chilies (roasted, seeds removed, slit on one side, and opened flat), or use the whole canned from Ortega
Cooking spray or oil
4 ounces Monterey Jack cheese, cut into 1/2 inch wide strips
2 cups cooked turkey, also in 1/2 inch wide strips
1/2 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup dairy (skim milk, milk, cream)
3 eggs
2/3 cup shredded cheddar cheese
Oil or spray baking dish (about 11x8x2). Fill each chili with a piece of Monterey cheese and a piece of turkey. Fold over edges of chilies and place seam down.In medium bowl combine flour, baking powder, and salt. In smaller bowl whisk together dairy and eggs. Slowly add wet mixture to dry mixture, beating until smooth. Pour carefully over chilies.Bake at 450 for 15 minutes. Turn off oven, remove casserole, sprinkle cheddar cheese on casserole and return to hot oven for about one minute to melt.

Microwave Turkey Quiche
1/2 cup chopped onion
3 cups cooked turkey, shredded or cubed
1/2 teaspoon salt
1/2 teaspoon cayenne
3 eggs
1 cup dairy (skim milk, milk, cream)
2 cups shredded cheddar cheese (or more)
6 strips cooked bacon, crumbled (or more)
Microwave onion 10 minutes until golden, stirring once. Stir in turkey, salt, and cayenne. Combine eggs and dairy, stir into turkey mixture. Press 2 cups cheese into a deep casserole round dish (micro safe). Sometimes it doesn't want to stick to the sides, keep pressing. Carefully (slowly!) pour the turkey mixture onto the cheese 'crust'. Top with crumbled bacon and more cheese if you want. Put in microwave on top of inverted plate, cover with wax paper. Micro on high for 5 minutes, then micro at 50% power for 15 minutes (remove the wax paper for the last 5 minutes). Let stand for 10 minutes before cutting.

That chile rellenos recipe looks awesome!

I'm planning on Turkey Shepherd's Pie, Turkey Noodle Soup, and lots of turkey sandwiches.

My favorite left over turkey (except for those slices reserved for turkey sandwiches) is to combine leftovers.

boil all the bits and pieces (wing tips, bones, shards from the cuttings, etc) in a small amount of water. When the meat separates itself from the bones remove all bones and cartilage. To the broth, add leftover peas, creamed onions, buttered corn, green beans (complete with the fried onions and mushroom soup), and any other veggie that was not sweetened. (I don't glaze anything so I don't deal with "honey glazed carrots" or "orange glazed brussel sprouts.") I will add all the leftover mashed potatoes and gravy. Mix into a thick thick soup and put in a baking dish. cover with biscuit dough......either "drops" from a tablespoon or as a poured on layer......and bake till the top is golden brown. Serve in a bowl as a pot pie..........

As I usually smoke the turkey, this makes a rich wonderful dinner.....smokey and full of flavor. I like it with a dry Chardonnay. And it uses those oddball leftovers that usually get thrown out.
