I love making a white chili or southwestern soup with leftover turkey. Check out www.Allrecipes.com. My favorite to use as a jumping off recipe is Tex Mex turkey soup. Yum!

2 of my favorite things to do with left over turkey are Turkey a la King and something I call Turkey Spaghetti.

The A La King is the basic chicken recipe with turkey substituted. The Spaghetti I take left over gravy and thin out with milk or half & half. Add meat. Serve over angel hair with garlic bread. Sometimes I serve over toast points if I am being lazy.

I also like big chunks of turkey in a salad.

I posted this in another thread. This is one of my favorites. I love turkey smothered in onions, cream of mushroom soup, and a bit chicken broth served over rice. That's the best part of having turkey IMO. Serve this with sweet peas and dinner rolls that you may have leftover as well. Or you could easily find them on sale tomorrow.

Turkey spaghetti. Use the same main recipe as chicken spaghetti. Cream of soups, Velveeta cheese block, Rotel tomatoes, and spaghetti.

Turkey salad sandwiches. You can serve this with crackers or chips, too.

Turkey quesadillas and enchiladas.

BBQ - Shred turkey and mix with a homemade bourbon BBQ sauce. Serve on quality buns or Cuban bread cut into bun sized pieces.

Chili - Shred turkey and add to a good beer based chili.

We always have, the Saturday after Thanksgiving, leftover Thanksgiving turkey and andouille sausage gumbo. Cook it on Friday with the leftovers, let it "meld" overnight, eat it on Saturday. It's become legendary.

With left over turkey, i make A Turkey Lasagne, or Stuffed Shells with Turkey, Ricotta Cheese, Mushrooms, in a White Wine Sacue, with a hint of garlic.

Or with left over turkey, i make Turkey Shepards Pie, with all the veggies you would put into the shepards pie, with layers of the Mash potato and Turkey, and the veggies, with tons of Shredded Cheese layerd in a 13x9 pan, and tons of durkee onion rings, that is what makes the dish so darn good. Also in this dish, is celery, onions, mushrooms yes i love them and white corn. You can make your own white sauce for this dish, if you like.

Another thing i do is to make Turkey Enchilidas, and believe me they are good.
