I came across this recipe and thought, something is wrong with the picture. I even put off trying it because I didn't think it would work. But guess what...

Peanut Butter Cookies
1 C peanut butter
1 C sugar
1 egg

Mix all together in a bowl, drop by tablespoon onto a cookie sheet lined with aluminum foil and bake for 10 minutes at 350. Remove the foil and turn upside down onto paper towels to allow to cool.

They harden as they cool and that really is all there is to it!

Yeah, that does look odd. If someone didn't tell me that it worked, I'd have guessed that you'd end up with a cookie puddle, LOL.

That looks like a great recipe to use when you need to bake cookies in a hurry and are out of some pantry items. Thanks for sharing.

My version has to have a few peanuts to add really crisp flavor to it. They're quite good when they are done like that.

I make these all the time! Sometimes I even add chocolate chips! We really like them.

I make these also. This recipe has been around a long time. I like to use crunchy peanut butter. You can bake them in balls without flattening them push in Hershey's kisses while cookies are warm. I was going to make them, but my bag of Hershey's kisses were mysteriously missing...

My husband makes these with the Hershey's kiss on top...they are absolutely delicious. He uses more PB though. I've made them with splenda instead of the sugar as well, and they are still good.
