I make something that I used to buy as a teen at a local burger place. Fruit burritos. Easy and yummy.

You need....Flour tortillas...1 can of cherry pie filling. Frying pan and oil.

Spoon the pie filling, 1 tbsp or so, onto the open flour tortilla. Fold like a burrito, make several and place on a plate.

Pour approx 1-2 cups oil into fry pan...heat.

Place 2-3 burritos into the hot oil. Brown on each side. Layer the burritos on top of paper towel lined plate. Sprinkle w/ a bit of sugar, let cool and serve.

We like them as is, but you could serve a bit of vanilla ice cream on top or any topping you prefer.

You can vary the cherry pie filling w/ any pie filling, or applesauce.

Always a hit.

One small container of cool whip type product.
1 sweetened condensed milk can
1 small frozen lemonade.
Prepared pie shell.

Combine the sweetened condensed milk with the frozen lemonade and mix well. Fold in the whipped topping mixing well. Pour into the already baked or graham cracker pie shell and chill in the refrigerator. Wallah!

Impossible Coconut Pie
4 tablespoons (1/2 stick) unsalted butter, melted
3/4 cups sugar
2 eggs
1/4 cup self-rising flour
1 1/4 cups sweetened shredded coconut
1 cup milk
1 teaspoon vanilla extract

Place a rack in the lower third of the oven and preheat the oven to 350 F. Butter a 9-inch pie plate and set aside.

In a large bowl, combine melted butter and sugar and whisk until incorporated. Add eggs and continue to whisk until smooth. Next add in the flour, coconut, milk and vanilla extract and stir to combine.

Scrap the batter into the pie plate and bake in the lower third of the oven for 45-55 minutes, until the pie is fairly dark golden (will be darker at the edges) and firm to the touch. Transfer the pie to a wire rack and cool completely before serving.

Store the pie covered in the refrigerator.

STRAWBERRY FLUFF
(tastes like strawberry shortcake without the cake!)


16-oz container small curd cottage cheese (full 4% fat..."lite" will be runny)
3-oz pkg strawberry jello
2 cups sliced strawberries
container Cool Whip, thawed (again, not "lite")


In large mixing bowl, add Jello powder to cottage cheese, and mix thoroughly, scraping sides of bowl. Stir in sliced strawberries, then fold in Cool Whip. Transfer to serving dish, cover, and refrigerate overnight.

Enjoy!



Don't be put off by the cottage cheese; remember that a lot of desserts use ricotta as fillings.

Use your favorite flavors/fruit as a variation. I use lime jello in place of the strawberry, and well-drained mandarin oranges (11-oz can) in place of strawberries for St. Patrick's Day, then sprinkle with a little coconut...the colors of Ireland!

Hot banana split


1 banana
1 Cadbury Flake chocolate bar, crumbled
2 scoops vanilla ice-cream
1 table spoon toasted walnuts, chopped


Preheat the oven to 190°C. Make a slit in the banana skin lengthways, cutting into flesh. Fill cavity with chocolate, then wrap in foil. Place on a baking tray and bake for 5-10 minutes or until chocolate melts. Remove from the oven, carefully open the banana skin and lift chocolate-coated banana onto a serving dish. Add the ice-cream and sprinkle the nuts over the top.
