We are trying to lose weight, and we are doing great, but we are getting tired of eating chicken breast.
Any ideas?

Sometimes I have a baked potato with plenty of low-fat cottage cheese, green onions, and seasoned salt on top as my main course.

I was thinking of you and your post and the thing I've done is adopt a "lifestyle" and avoid the word diet.

I use very lean ground beef (less fat that ground turkey), chicken,ham is even low fat. Low fat cheeses, yogurts, salad dressings. Eggs are a great protein source.

The trick is not to deprive yourself because then you fail.

I have discovered nofat/nosugar instant puddings and jellos. Great for a nonguilty sweet. Another thing I do is cut in nonfat cottage cheese (darigold is my favorite brand) instead of mayo for tuna or chicken salad sandwich, you will be pleasantly surprised. Have you heard of the book Hungry Girl? Tons of good recipes that take a lot of the fat out by sub. ingredients.

For bean tacos, nachos etc. Instead of canned refried beans, empty a can of pinto beans into a microwave bowl and m/w for about 4 minutes on high (varies according to oven) until hot. Option: add a tsp of dry minced onion to the bowl before the beans. Mash the hot beans with a potato masher leaving some beany bits - not too smooth. The result is a rich tasting, creamy beans, without the lard of the canned variety. Carefully add a bit of water if too thick - a little goes a long way.

I put the mashed beans in a mini-crock pot to serve with tacos. They're good
