Chicken and new potatoes

1. Heat 1/4 C of olive oil in a dutch oven
2. Brown 4 skinned, boned chicken breasts, about 5 minutes per side
3. Add 8 quartered new potatoes
4. Add 1/2 C white wine
5. Add 12 smashed cloves of garlic
6. Add about 1/4 C of fresh rosemary or thyme
7. Salt and pepper to taste

Braise the browned chicken, potatoes, etc., for 45 minutes, turning once halfway through, or until chicken and potatoes both are cooked through.

Optional: If you like, during the last 7-10 minutes of cooking you can place broccoli florets on top of the chicken and potatoes, and allow them to steam. One-pot meal!

Pork chops in beer

1. Chop an onion; place the onion in the bottom of a slow cooker
2. Place as many pork chops -- boned or bone-in -- as you like (just not past the top of the slow cooker, LOL) on top of the onions.
3. Cover with beer. The more pork chops you use, the more beer you'll need.
4. Cook on low for about 8 hours (may vary depending on how thick the chops are).
5. Drink remaining beer.

Lasagna soup

1 box of hamb helper
1 lb of hamburger
1 zucchini diced
1 can diced tomatoes with basil and garlic
1 can corn
1 can french green beans


Throw all of your ingrediants into crock pot -browned hamb and juices from cans. Add water and turn on low. End of day, sprinkle parmesean cheese on top. Use the cheap brand, not hamb helper, it is the same. To alter the taste of this recipe, use a variety of diced tomatoes. I really like the brand that adds basil, garlic.

Talking artichoke nibbles

Artichoke Nibbles



List of Ingredients

2 6-ounce jars marinated artichoke hearts
1 medium onion, chopped
1 garlic clove, chopped
4 eggs, beaten
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon oregano
2 tablespoons parsley
1/2 cup cracker or bread crumbs
1/2 pound [COLOR=gray !important][COLOR=gray !important]cheddar [COLOR=gray !important]cheese[/color][/color][/color], grated




Recipe



Preheat oven to 250 degrees. Drain artichoke hearts, save juice. Chop. In a [COLOR=gray !important][COLOR=gray !important]frying [COLOR=gray !important]pan[/color][/color][/color], saute onion and garlic in juice from artichokes.

In a bowl, mix eggs, pepper, salt, oregano, parsley, cracker crumbs and cheese. Add the onion/garlic mixture.

Put batter in a 7-by-11 inch greased baking pan. Bake for 30 minutes. Cut into small squares. Let stand for 10 minutes.

Yield: serves 8.

Chocolate Cream Pie

1 large container of heavy cream
2 pkgs of instant chocolate pudding
1 3/4 cups milk
1 Oreo cookie pie crust (or regular graham cracker crust)

Beat heavy cream until stiff peaks form. Set aside. With a wire whisk, mix the 2 boxes of pudding with the milk until blended. Mixture will be thick. Fold in about 2 cups of the heavy cream with a spatula. Spoon into the pie crust and smooth top. Decorate with the rest of the heavy cream and top with shaved chocolate. Refridgerate until served.

Very easy and it's wonderful every time! You can dress it up to take to a party or whip it up for a quick dessert at home. My husband requests this all the time for his birthday "cake".

I make a lot of sandwiches actually. I bought my last girlfriend a cookbook by Martha Storey. Southern or rustic food. American cooking, mostly.

Caramel Brownies

1 box devils food cake mix
evaporated milk (2/3 cup divided)
1 1/2 sticks margerine
25 caramels
3/4 cup chocolate chips

Preheat oven to 350 degrees F. Grease a brownie pan (8x11 or 9x13). Mix devils food cake mix, melted margerine, and 1/3 cup evaporated milk in a large mixing bowl. Pat half of batter into greased brownie pan. Bake for 6 minutes. Cool for 5 minutes. While brownie is cooling, melt caramels with remainder (1/3 cup) evaporated milk. Pour caramel mixture over brownie. Pour chocolate chips over caramel. Lay the remainder of the brownie batter over the chocolate chips. (easiest if you pull out small amounts of the batter and flatten it before laying it in the pan). Bake for 18 minutes. Let cool.

Best if eaten a day after they're made.
