Stuffed Cabbage
(((((did you want an easy one?)))
1 large head green cabbage, cored removed
1 pound lean ground beef
1/3cup converted rice - Uncle Ben's
1 (1.5-ounce) packet meatloaf seasoning (recommended: McCormick)
2 eggs
1 1/2 cups frozen chopped onions - Ore-Ida
1 (26-ounce) jar pasta sauce (recommended: Newman's Own)
2 (14.5-ounce) cans diced tomatoes with green peppers, celery and onion

Directions
Preheat oven to 350 degrees F.
Bring a large pot of water to a boil. Insert a large fork into the bottom of the cabbage. Holding the fork place the cabbage into the boiling water for about 10 seconds. Remove from water and peel off the leaves. Place the leaves in a large bowl and set aside.
Combine ground beef, uncooked rice, meatloaf seasoning, and eggs. Stir thoroughly; set aside.
Remove cabbage leaves from the bowl and cut off white thick stem part. Line a large oven-safe 9 x 12 baking dish with the smaller inner white cabbage leaves.
Place 2 tablespoons of meat mixture in the center of a leaf. Fold over sides and roll up. Repeat with remaining leaves and meat. Place cabbage rolls seam side down in cabbage leaf lined pan. Cover with chopped onions.
In a small bowl, stir together pasta sauce and diced tomatoes. Pour over onions and cover pan with foil. Bake in preheated oven for 1 hour.
Serve hot with sauce.

Here's an easy casserole which always brings ooh's and ahhh's from my adult kids and grandkids when I make it.

1 Box Spanish rice (I always use Rice-a-roni brand)
Garlic Powder
Italian Seasoning
1 or 2 cans tomato sauce
Ground Beef
Onion (Chop 1/2 cup)
Green Pepper (Chop small amount)
Shredded Cheddar Cheese


Make the Spanish Rice as directed on the box. Brown the ground beef, chopped onion and chopped green pepper and drain when meat is done. Mix the cooked ground beef with the cooked spanish rice....add Italian Seasoning (about 3 shakes) and Garlic Powder (about 4 shakes) and salt and pepper to taste. Add enough tomato sauce so that it's not dry. Taste and see if any more spice is needed. Put in greased or sprayed casserole dish and top with shredded Cheddar Cheese. Bake until the Cheddar Cheese is melted and getting a little golden brown.

Sorry I never measure anything for this so I can't tell you exact measurements....I made this recipe up so it's not a rocket science recipe. I just taste it until it tastes good.

CREAMY CHICKEN BAKE

4 chicken breasts, skinned and boned
4 slices Monterey Jack cheese
4 slices American cheese
1 (10-ounce) can cream of chicken soup
1/4 cup water
1 cup seasoned stuffing mix
1/4 cup butter or maragarine, melted

Grease a large baking dish. Lay chicken in dish and place cheese slices
on top.
In a separate bowl, mix together the soup and water, and spoon over the
chicken and cheese.
Sprinkle with stuffing mix and pour butter on top.
Bake in a preheated 350-degree oven for 50 minutes.

Default Pizza Spaghetti Casserole




Ingredients:
6 ounces of cooked spaghetti
1 egg
1/4 cup grated Parmesan cheese
1 pound lean ground beef
1 can of french fried onions
8 ounces sliced mushrooms, drained
1 jar spaghetti sauce or 2 cups homemade
2 cups shredded mozzarella cheese
pepperoni


Step 1:

combine cooked spaghetti, Parmesan cheese, and egg.


Step 2:

Press over the bottom and up sides of deep pie pan to form a "crust."


Step 3:

Fry ground beef... add onions when browning begins. drain

Step 4:

add the sauce...stir.


Step 5:

add meat/sauce mix, cheese, and toppings of choice on top of spaghetti noodles


Step 6:

Bake till cheese is golden brown in 350-degree oven, about 20 minutes.

SPINACH & CHICKEN MOSTACCIOLI CASSEROLE - serves 12
10 oz pkg mostaccioli (or penne works)
10 oz pkg frozen chopped spinach, thawed
Three 6 oz boneless, skinless chicken breast halves cut in 1" pieces
2/3 cup chopped onion
2 large cloves garlic, minced
2 tsp veg. oil
Two 14 oz cans whole tomatoes with juice, chopped
3 TBL tomato paste
1 1/4 tsp dried basil
3/4 tsp oregano
1/4 tsp salt
1/2 cup grated Parmesan

Preheat oven to 350°. Cook pasta according to the pkg directions. Squeeze excess liquid from the spinach. Saute the chicken,, onion & garlic in the oil in a skillet. Stir in the tonmatoes, tomato paste & spices; simmer 5 minutes. Combine the cooked pasta, spinach, chicken mixture & 1/4 cup of the Parmesan; stir well. Spoon the mixture into a 13x9x2" pan. Sprinkle with the remaining 1/4 cup cheese. Bake 20-30 minutes.

Default Potato Spicy Curry Recipe



Ingredients


1. Potatoes - 5 (boiled and cut in to bite size pieces)

2. Onion - 4 (finely chopped)

3. Tomatoes - 4 (finely chopped)

4. Green chilly - 1 (Slit lengthwise)

5. Ginger garlic paste - 3 tsp

6. Cashew paste - 5 tsp (Soak raw cashews for 15min in milk and grind)

5. Curry leaves - 6

6. Cinnamon - 2 sticks

7. Cloves - 2

8. Fennel seeds - 1 tsp

9. turmeric powder - 1 tsp

10. Red chilly powder - 3 tsp

11. Coriander powder - 4 tsp

12. Garam masala powder - 3 tsp

13. Pepper powder - 2 tsp

14. Salt - as per taste

15. Oil - for frying

16. Cilantro for garnish.

How to make Potato Spicy Curry

1. Crush and powder the cinnamon, cloves, fennel seeds and keep aside.
2. Heat oil in a kadai, add the above powdered spices and then add the onion, curry leaves and green chilly. Saute till transparent.
3. Now add the ginger garlic paste and cashew paste. Saute till the raw flavour goes.
4. Add the tomatoes, saute for 3mins.
5. Add the turmeric, chilly, coriander, garam masala powder and salt. Saute till the oil comes out.
6. Add the sliced potatoes and saute till the masala nicely gets coated.
7. Now add water for the curry, bring it to boil till the required curry consistency.
8. Sprinke pepper powder and garnish with cilantro.
Tastes excellent with hot rice or chappati.

1 whole cooked, diced chicken
2 cans cream of chicken soup
1 onion, chopped
1 can mushrooms
1 lg. pkg. potato chips (crumbled), reserve 1/2 c. for top
1 c. chopped celery


Mix all ingredients together, add 1 to 1 1/2 cups milk. Put into a casserole. Top with pats of butter and reserved potato chips. Bake at 350 degrees for 1 hour.

I call this chicken casserole with potatoe chip topping and it is so easy and delish .
