creamy cole slaw
This has no mayo but is so good. It is from the Brookville Hotel in Abilene KS.


1 1/2 pounds shredded cabbage
1 teaspoon salt
2/3 cup sugar
1/3 cup vinegar
1 cup whipping cream


Place cabbage in covered dish and chill several hours. Mix remaining ingredients in order given 30 minutes before serving. chill. Toss with cabbage and serve immediately.

This does not keep well in the refrigerator overnight. It is best served within 30 minutes after tossing with dressing

I swear by KFC's clone..


KFC coleslaw

8 cups finely diced cabbage (about 1 head)
1/4 cup diced carrot
2 tablespoons minced onions
1/3 cup granulated sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon juice

Directions

Cabbage and carrots must be finely diced.

Pour cabbage and carrot mixture into large bowl and stir in minced onions.

Using regular blade on food processor process remaining ingredients until smooth.

Pour over vegetable mixture and mix thoroughly.

Cover bowl and refrigerate several hours or overnight before serving.
Serves 10

I hate KFC but I like their coleslaw, I guess. I've never had their coleslaw, just the knock-off recipe.

Gee, reading this thread has made me crave coleslaw all of a sudden. Now I have to figure out something to make tonight that goes good with coleslaw ... ... I know! Ribs! Thanks, guys

As far as recipes, I like the KFC one, just with a little less sugar. And I found I really liked in a cookbook with pecans and apples and the dressing is spicy with cayenne. Sometimes I just prefer simple though - shredded cabbage with onion and a very simple oil and lemon dressing, S&P and that's about it.

It's a salad that's pretty flexible and versatile. Hard to mess up, I would think.

I love KFC's version too. I used to work there and it was easy to copy after I saw how they made it. But then I forgot the recipe so now I use the knock off version too. It's extemely close to KFC if not right on.

In a hurry, I sometimes throw together this recipe:

1 pkg cole slaw
1/2 cup Miracle Whip
1 tablespoon vinegar
sugar to taste (1 or 2 tsp.)
1 to 2 tsp. celery salt

Mix and keep in fridge till ready to serve.

I've made it with crushed pineapple, and I found one that used Granny Smith apples and apple juice concentrate.
