1) Make your favorite Mac n' Cheese from your own recipe or just get a box of Kraft's Mac and Cheese and follow the directions.

2) Add your favorite veggies.

3) Stir.

Default My mom's macaroni salad

This makes for a large crowd but you don't have to make as much.

2 lbs elbow macaroni
2 cups Hellman's mayo- might need more
Cracker barrel white cheddar cheese grated- my uses 1to 1 1/2 bricks
2 Tbsp Mccormick onion powder- she says this brand is the best for her salad
1 tsp salt
1 tsp black pepper

Cook pasta according to package directions, drain and rinse under cold water and place in a large bowl, add salt, black pepper, and onion powder. Next, add mayo and mix well. Add cheese last and mix well again. Taste for seasonings, you may need more onion powder or salt. If not creamy enough you can add more mayo. This recipe can be scaled down and you can use 1 lb of elbows, less cheese and mayo. It's a huge hit. My mom has even added fresh dill and tuna fish to this also.

i think I would add the dill and maybe the tuna as well: maybe some green onions, or olives, or even diced tomatoes.

Sounds good to me lubby......

I also like macaroni salad made with elbows, mayo/miracle whip, chopped sweet pickles, chopped celery, little chopped green onion and tuna or chopped ham pieces.....good on a hot summer night with pieces of buttered baquette cut on an angle or crackers

I don't usually use the tuna or ham, but it would be good. I have never used cheese either, but have had it that way, it does add to the salad but I wouldn't use Micracle Whip: mom would have, so would mom in law, they thought I was nuts for using mayo..It is amazing how different peoples tastes can be, isn't it?

When I'm making Macaroni Salad as a side dish, I don't include any meat.


I was raised on miracle whip and actually prefer it to mayo, but I have both in the refrigerator, using one or the other for whatever I'm making. Peoples tastes are definitely different and some change as we age (cough cough) .... I mean get younger!

I think the mayo versus Miracle whip might have to do with regions. It seems like the people I know who prefer or did prefer Miracle whip, for the most part came your areas around Ohio, WV and maybe Kansas, as well as other places of course. Those raised in the south and the west seem to do the mayo thing. It could just ve my imagination..

My mom grew up on miracle whip and we in NY. Since then she won't even touch the stuff. I have never had it.
