I'm searching for a great Blue Cheese Dipping Sauce. I found this recipe on Emeril's site.

Anyone have a recipe to URL share or favorite homemade?

I'm planning a small (4) family get-together next week and would like to make the hot wings, blue cheese dip with variety vegetables and maybe Texas garlic toast. Any ideas?

Another idea-can you get Maries Blue Cheese Dressing (usually produce section refrigerated) and add more blue cheese to consistency-it's very good.

Here's mine:

Cal's Blue Cheese Dressing/Dip
This will keep about 1 week in the fridge.

4oz. Blue Cheese or Gorgonzola, crumbled (more if desired)
3 TBSP. light cream
1/2 cup of mayo
pinch of salt
pinch of fresh ground black pepper
1 tsp mustard - I use dijon or guldens - NOT yellow
1/4 cup red wine vinegar
4 TBSP. vegetable oil

Mix together light cream and mayo and mustard with a fork. And salt and pepper. Mix. Add vinegar. Mix. Add oil and mix.
Lastly, add blue cheese and mix gently so as not to break up crumbles.
Chill for at least 1 hour.
Stir gently before serving.

Buffalo wings, roast beef, salads, vegetable trays; whatever you want.
I like to dip just plan old sesame bread sticks, or chunks of italian bread in mine too.

These sound delish - I'm pushing for a thread dedicated exclusively to dips and sauces.
