I cut this recipe out of our local newspaper today. Sounds interesting and delicious! Thought I would share...
Bacon Brittle
9 pieces fully cooked bacon
1/ tsp. ground red pepper
1/2 tsp. pumpkin seeds
1/4 cup Planters Pecan pieces
1 cup sugar
1/2 cup light corn syrup
1/2 cup water
DIRECTIONS:
Grease baking sheet, set aside. Spread bacon onto microwavable towel; microwave on high one minute . Transfer bacon to medium bowl; immediately add pepper, toss to coat. Add pumpkin seeds and pecans, toss lightly.
Mix sugar, corn syrup and water in medium saucepan. Bring to boil on medium heat, stirring constantly. Cover with lid. Cook 2-3 minutes, or until sugar is dissolved. DO NOT STIR. Remove lid from saucepan, continue boiling sugar for 20 minutes, or until mixture reaches hard-cracked state-immediately remove and add bacon mixture. Pour onto prepared baking sheet, use greased spoon or spatula to spread mixture into an even layer.
Break brittle into bite-size pieces and store in an air tight container.
