We have a few cans of pumpkin that I have been wanting to use up.
I was undecided on cookies or bread...and finally decided on cookies.
I found Iced Pumpkin Cookies - All Recipes and modified the recipe a little...with the spices...and added some cinnamon/sugar mix in the icing. The dog was jumping around barking at me as soon as I started my mixer! haha! (she is a basset hound...about 8 months old). The kids wouldn't leave the dough alone, as well as the cookies while the icing was drying. If anyone has any other type of pumpkin recipes, I would be more than interested in trying them. Nothing says Autumn like pumpkin desserts (even if you live in the south and it's still warm and humid  ).

It certainly is the time of year for pumpkin recipes!
I made the 2 ingredient pumpkin muffins this morning & a pumpkin bread.
Once we finish those up, we will have to give this a try~it got great reviews! Thanks!

thanks for the pumpkin recipes! It's hard to stand in the kitchen and bake when it's so humid and warm still....but It is autumn, after all! hehe

Anyone have the "Peanuts Cook Book"?  I bought it when I was in fifth grade -- 1970-ish. It's got a recipe for Great Pumpkin Cookies. We make them every Halloween, Thanksgiving and Christmas. I'll post the recipe when I get home.

Great Pumpkin Cookies
1 1/2 C brown sugar, packed
1/2 C shortening
2 eggs
1 lb. can pumpkin (about 2 cups)
2 3/4 cups flour, sifted
1 tbsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/4 tsp ginger
1 cup raisins
1 cup pecans, chopped
Heat oven to 400 degrees. Mix sugar, shortening, eggs and pumpkin thoroughly. Sift dry ingredients and add to pumpkin mixture. Blend well. Add raisins and pecans. Drop batter by teaspoonsful on ungreased baking sheets. Bake 12 to 15 minutes or until lightly browned (don't overbake!!!) Makes 4-5 dozen.
