So this year I decided to make all different and new dishes for the holiday, ones that I haven't tried before, just to see if any were worth keeping around. So I wanted to share a couple that were awesome. I will be making these again next year. Feel free to share your holiday successes too!
Broccoli Rice Casserole
2c. cooked white rice
2-3 (10oz) pkgs frozen chopped broccoli, cooked & drained
1 (10 3/4 oz) can cream of mushroom soup
1 (8oz) can sliced water chestnuts, drained
1 (8oz) can bamboo shoots
1 (8oz) jar cheese wiz
1/2 c. butter melted ( i accidently forgot to put the butter in and it was perfectly fine without it)
1 (8oz) pkg shredded cheddar cheese
1 (2 oz) jar pimientos, drained
Preheat oven to 325 degrees. Mix all ingredients together, except for the shredded cheddar and the pimientos. Pour into a greased 9x13 pan. Sprinkle cheese and pimientos over the top. Bake for 30-40 minutes.
Christmas morning Waffles
1 3/4c. all purpose flour
1/2 tsp. salt
3 tsp. baking powder
2 egg yolks, beaten
1 1/4c. milk
1/2 c. oil
2 egg whites, stiffly beaten
Sift dry ingredients together. Combine egg yolks, milk, and oil. Stir into dry ingredients. Fold in egg whites. Bake in hot waffle iron. Great with strawberry syrup and whipped cream.
Buttermilk Sky Salad
1 (20 oz) can crushed pineapple, drained
2 (3oz) boxes jello, peach or orange are best
2 c. buttermilk
1 (8 0z) carton cool whip
In a saucepan bring pineapple and jello to a boil. Cool. Add buttermilk, and chill until consistency of unbeaten egg whites. Fold in whipped topping. Chill until firm.
