I am always on the search for a new bean burger recipe. I also have always stuck with the regular beans. A friend told me about Adzuki beans which are an Asian bean very high in protein and iron. I finally made a burger and I liked it.

So this is how I made them:
First I soaked 1 cup of beans overnight. Cooked them for about 1 hour. They expanded which I didn't realize they would. I measured out 1 cup of cooked beans and mashed them.
In a skillet with a little olive oil I sauteed @ 1/4 cup each of carrots, onions, and red pepper, chopped, until tender. I mixed that with the beans and added chopped fresh spinach. Then I added Italian seasoned bread crumbs and 2 eggs. Combine ingredients to a desired consistency.
Make patties and put on a plate and refrigerate for 20 minutes.
Then you are ready to cook them.
Easy and nutritious. This can be used with any bean.
