We always have what my Gramma called hoagies. On a large piece of tinfoil pat out whatever size hamburger you want, make sure you pat it out thin, s&p, on top of that place cut up potatoes and onions more s&p and fold all up and place on hot coals or grill. These are so good. And of course you could add other veggies or garlic and things if you liked.

My girlfriend made these when we went camping with her and her hubby once, I make them at home now too. Cut potatoes into four wedges and then cut those in half. Melt 1/4 cup of butter mix in 1 TBS vinegar, 1 TBS or so cholula hot sauce or whatever you like. Stir the potatoes up in this and let sit a couple minutes. Place potatoes on grill and brush with the remaining mixture while they cook, eat them with ranch dressing. You can also use butter substitute like I do. My hubby likes to dip them in blue cheese dressing.

Other than that we usually just grill burgers and hot dogs. And of course we have to have steaks cooked over an open wood fire while we're there, that's the best.

I almost forgot about breakfast burritos. Potatoes o'brien, cheese, eggs, meat of your liking - I prefer bacon. In a large iro skillet cook the meat and set aside then put in the potatoes and cook, push to the side of the pan and pour in the eggs, when that's cooked put the broken up meat back in and mix all together and add cheese and stir to melt in. My friend makes these with little smokies which is unbelievably good also. Then use a pan to warm torillas and put in some filling top with salsa and voila breakfast! My husband cooks these when we go, it's so nice because he doesn't cook at home ever so camping is a nice break for me. It's so nice to be woken up to the words "baby your breakfast is ready"!! I love camping!!!!!

In case your not aware you can "bake" potatoes by wrapping them in tin foil and setting them on the edge of a fire for a couple hours. You can also heat up canned baked beans this way, but they don't take as long to heat.

We are bringing our lap top for movies. As hard as we try to go rustic it is so much easier to have movies for the kids. Especially if it rains a lot!
For me the whole point of camping is to get my kids away from video of any kind. We bring lots of coloring books, crafts, and board games.

Default Individual Pineapple Upside-Down Cakes

I do a lot of camping...sometimes I think I love it because of the cooking. Friends came to visit me one evening and suggested we go "out" to eat! I won't get into the spread I prepared them...but we had some good laughs about what their idea of camping was compared to the actual experience.

The newest recipe we tried this summer, it's very easy to get the kids involved preparing their own:

Individual Pineapple Upside-Down Cakes


Take a plain cake donut
Spread butter on the top
Turn it upside down into a plate of brown sugar so it sticks
Top with a pineapple ring
Wrap it in foil and place it close to your campfire...we had ours about a inch or two from the hottest edge.
Flip and turn with tongs...about 7-10 mins...let cool to the touch.

Delish!
