This cheesecake was more like a mousse - airy and fluffy. The lemon flavor is bright, if a little sweet. Another thing is the ease of the dish. You can't find a quicker dessert that doesn't come from a box. (If desired can be prepared using fat-free ingredients)


Lemonade Cheesecake

1-(8ounce) package Philadelphia cream cheese,softened
1 teaspoon Crystal Light Lemonade Flavor Drink Mix
1/4 cup cold milk
1 (8ounce) tub Cool Whip Whipped Topping, thawed
1 ready-to-use graham cracker crumb crust (6 ounces)

Beat cream cheese and drink mix in large bowl with mixer until well-blended. Gradually add milk, mixing until well blended. Stir in Cool Whip; spoon into crust. Refrigerate 4 hours or until firm.

Sounds so good. Now if only there were a cheesecake for those of us who are severly lactose intolerant.

Have you given a look at (About.com) Dairy Free Recipes - Dairy-Free Cooking - Lactose Free Recipes

It uses soy cream cheese.

Reminds me of a pie I used to make a while ago... I was a kid so i'm sure I got it off of a box/bag :0)
It had cool whip (anyone else hear Stewie from Family Guy in their head when they say/write that? Cooo wHIP. lol), jello packet, graham cracker crust... let me see what I can find....
