It seems more odd that you would take such a simple inquiry so defensively. People are naturally curious. If you hang out with them, then at some point, if they have any interest in you at all, in any way, you can expect them to want to know more about you. It's a simple as that. If you find that too invasive, then find yourself a nice island.

Are you always this paranoid?

Sometimes people just ask questions to show interest in your life, take a chill pill!

No problem! What do you pay for an island keeper and what are the bennies? Does it come with a Tarzan swinging off through the trees?

Buy yourself a wedding band and no one will ask you if you have a girlfriend. Problem solved.

Maybe they're looking for something you have in common with them.

People ask questions. How you respond is up to you. If you show upset than those that delight in finding weakness will use it against you.

You might try not using "no". Instead say, "I am in-between at the moment, how about you (have bf/gf)?". Answering a question with a question deflects the subject. It also can keep you in charge of the conversation. They need not know that you are in between 0 and 1 for girlfriends.

I would think you'd be happy if a girl asked you if you're seeing anyone. Most times it indicates interest. Are you just not interested in girls?

IDK, they still may ask him if he wants one.

Yeah I feel you I'm in the same situation. I can understand why you would get defensive if people act like that.
