I just asked was 12am too late and she said she is just getting home from work so I can call her tomorrow. Then why say anytime?

Exactly! Most people understand what "anytime" means! On the other hand, people like me turn off the ringer any time we don't want to be bothered , so it doesn't really matter to us.
