Not an expert, but I think it's the processing that's so important and where they add all the junk. If you could ascertain that your organically-raised beef is processed properly (not through a large-scale commercial place) then I think you'd be OK.

I found it interesting in the article that they claim "organic" is a regulated term. First, I didn't believe that it was unless something has changed in the last year or so, and two, how can you regulate the term"organic" in the sense that anything with a carbon atom in it is organic?

A few years ago FDA stepped in and began regulating organic food products. All they really did was help boost "organic" food sales because the regulations allow for deceptively clever marketing. Hence the reason for seeing the word "organic" on so many food products.
