Its a good idea to cook the hot dog first. I prefer the bbq which adds flavor but also with the holes I poke in the dog it gets the fat out so it isn't sliming up the inside of the corndog. I think the classic cornbread with a little salt, pepper, honey is probably the best combo but thats just me.
Burritos. Yes! I prefer flank steak. I use a fairly standard rub on it, salt, pepper, garlic, paprika, parsley flakes, pinch a cayenne. Just an itty bitty pinch though. Too much overpowers all the flavors. That goes on the grill. I fry red onions, green and yellow peppers in a little bit of very hot olive oil. This part needs to be done just right, not till they are all soft but just sorta blanched. Refried beans obviously. Gots to have cilantro and lots of it. Gauc, I usually add a little bit of very finally diced radish to mine when its for burritos. Sounds weird I thought when someone mentioned it but I like it. I keep everything separate so people can add or subtract whatever they want.
BTW, did I mention I had to send the cook home? Broke his foot. They used to let you stay up here when you just had little owies like a broken bone but now everyone is worried about lawsuits and I had to send him out even though he wasn't really hurt. Sigh. I am SO hungry. lol
