I met this guy who was the same way and we both had high standards and are picky but we met each other's wants and needs and more so we went on a date. The date took place this past Tuesday, I texted him late that night but have yet to hear back from him. Is he not interested in me?

The trouble with texting is that there are very few excuses for someone not to respond reasonably soon. Sounds like he's not interested.
Just because two people are straight edge doesn't guarantee there will be enough chemistry to make a relationship out of it.
