Why do people overreact to texts? (girl, alcohol, relations, message)

Was getting these texts from this girl I am close to getting in a relationship with. Well I would say

She asked what we should get for dinner and I said, well I'm not sure. She said "well how about Italian and I agreed.

She said good, that was easy. I said yea I'm a genius for that idea and she said haha sure you are

I said well I dont want to compliment you to much so you get a big head on ya, and she said ahah wooow

I was like umm I compliment you all teh time, you know that

She ended up changing teh subject

Should I apologize or do you think she knows I was just messing with her

Um, who was overreacting to the texts? Was it her? Did you even talk to about the messages face-to-face? How old are you two? Teens? Chill. If everything is alright between you two whenever you hangout with each other, then the messages don't matter.
