I agree that wearing a blazer can increase a casual look but that's not what the OP is asking. He's asking if he should wear a suit to dinner so he can show his date that he's mature enough. Wearing a suit doesn't make a person more mature. I work with "suits" and some of them act like little boys. If the OP's date thinks he's not mature enough then I don't think wearing a suit matters.

Eh, I'm not a fan of wearing a blazer without a shirt and tie.
I just don't understand that look. But if you wanna rock it, rock it. But I sure as H.E. double tooth pick wouldn't wear a blazer for a casual function.
And on a first date ? One time in the summer a woman met me 20 mins late with Khaki shorts, a halter top, and flip flops at a somewhat decent restaurant. But oh my, she was a cutie. Was a one time only date though.
IMO, Casual is the way to go on a first date. Jeans, decent shoes, and a decent shirt. To me that means the following:
No gym shoes. period
No ripped up holey jeans
No hoodie, or no stretched out t-shirt.
For me, I'll wear a collared shirt, normal jeans, and some non-gym shoes.
Regardless if it's coffee, a meal, or drinks.
If i is really hot out, I may wear a decent t-shirt, but it would have to be an outside date and over 80 degrees.
If I was on-the-go, and I was in a suit, I may show up as such, but I will let her know, "hey, I will be the guy in a suit. I had a conference today, and I won't be able to change before we meet up." If that is the case, I pick a location conducive to me in a suit. That would exclude blue collar type bar scenes.... or pool halls.
If wearing a suit "isn't you" then don't do it. You will come across as uncomfortable and it will affect your general movements and body language. Rock whatever look best exemplifies who you are, OWN IT! Own your look and make it your own!
Are you dressing the suit or is the suit dressing you? (Important question) I can always tell when someone does not wear suits regularly, they seem to have a restrained range of motion and are careful not to have anything touch their suit and constantly look at themselves to make sure their suit is exactly right. This is apparent when someone is wearing a suit but they would rather not.
I wear custom made suits everyday with my name embroidered on the inside, with custom velvet suspenders and odd colored shoes. It is who I am. I don't own a single pair of jeans. I'd be too conscious of myself if I changed the way I dress for somebody else, it would affect me. If a woman has a problem with me going grocery shopping in a brightly colored suit and a bow tie then she isn't for me.
Just don't wear exotic animal skin dress shoes to the zoo, otherwise you and your date could be mobbed by animal activists. Which is hypocritical of them if they own any leather products at all such as most wallets and belts.

It depends on how you rock it. I have worn brightly colored tailcoat tuxedos to dance clubs, bookstores, bars, coffee shops, restaurants, and the zoo and have gotten follow up dates before. Red, white, purple, even light blue like in Dumb and Dumber.
