Well, currently I am dating a former lesbian, although the experience is quite the same as dating a straight girl but the differences is way more interesting . She may be lying to you. I had a friend in college that would pretend to be a lesbian to pick up guys. Btw it worked every single time.
If she was really a lesbian then she wouldn't have just decided not to be one anymore. I don't believe in "former lesbians" or "former straight people" or whatever. That isn't how it works. She has either been straight all along, is bisexual, or is still a lesbian and is experimenting with dudes.
She may have never had an experience with a man until you. I had a cousin who fit this profile. She came out as a Lesbian during High School, then I saw her at a family event with boyfriend in her early 20s.
Former lesbian/gay doesn't exist, if you do say that, you were likely experimenting in the first place or you are bi and feel that you are "tired of x gender" for a while. W/o knowing her, I don't really now if she is authentic or not with you though, but keep what I said in mind if she does leave!
As far as handling the Ex, if you don't feel comfortable handling it, make her deal with her. It is her ex afterall.
