I've had a few dates but mostly they've been from OLD or setup by a friend. Say I know a girl who I like and seem to have chemistry with would it be better for me to just straight up ask "Can I take you out on a date?" or be more subtle and ask "I'd like to have some coffee with you sometime"?

I'm old school so my opinion would be, assuming you don't know how this girl feels about you, go with the coffee. This way you can gage her reaction and it doesn't put her on the spot but gives her room to consider and it doesn't put you on the spot for rejection. Sometimes we are unsure about a straight out formal date and a more casual situation gives time to explore our feelings without so much pressure.
"Would you like to grab a cup of coffee sometime?" is generally how it's phrased.
Not trying to be pedantic, but one versus the other will set the tone for how she sees you, and "I'd like to [do whatever]" is just a wee bit aggressive.
I would straight up ask her out. It's more romantic. Some day - when you are old and married - it's fun to look back and remember your first date, your first kiss, etc. So do it right. Plus, a bold man is a turn on.
"Would you like to go ice skating/bicycling/museum with me next weekend?". As simple as that. Anything less than "yes" or "I can't next weekend, how about Tuesday?" take it as a no.
Doesn't matter....the result will either be yes or no.
