In Hawaii, sometimes they dig a pit, put in hot rocks from a fire, wrap the pig in banana leaves, place on rocks, cover with hot rocks, put dirt on top...COOK...Delicious. Meat falls off bone.
I never did it but watched part of the process...
a friend of mine once used burlap bags to cover pig. Pig was Deelicious..at a home party he had.

Oh yes, had roasted pig in a pit several times at motorcycle races - deelicious! Meat so tender it falls off the bone. I highly recommend it.
There's also an increased amount of women in here tonight I'd love to reach into my computer and slap upside the head.
