Reading Exodus 31:15-18, it struck me as odd that God instructed everyone to obey the 10 commandments while, at the same time, he wanted those who worked on the sabbath to be put to death. Which got me thinking about all the killing God did and ordered others to do. Is God above the Thou Shall Not Kill? Why wouldn't he want to follow his own commandments?

That verse could be more appropriately translated as "Thou shalt not kill without cause.", ie: murder.
Obviously, God did not just go around killing people willy-nilly and had a purpose for it, so He's not a murderer.
Granted, we may not like or agree with, or even understand His purposes, but He is who He is and we can either accept that, or waste time raging against the machine.

Does that mean we shalt not kill when we we go to fight for our countries freedom and safety,we lay down our arms and let the enemy have control by letting evil reign. Think about it!!!!!!!!!!!!!!

I get that, but in this case God wanted to kill people just because they didn't rest on the sabbath. If people are supposed to be his greatest creation, then why would God kill them over something that, to me, sounds very petty?
There's an old saw for this, parents often use it.
"Do as I say, not as I do."
Forgot about that oldie. It's the ultimate cop out for parents.
