So I went to apply for my first apartment, and after learning online again and again how important it is to get things in writing, I failed to do that.

I applied for an apartment, and gave a $250 hold fee, which becomes my security deposit.
She wrote that it's refundable if my application gets denied, but after I left and saw it again I realized it wasn't signed. ):

How worried should I be?

I wouldn't be very worried - worst case it's $250, not like a lease that might put you on the hook for $12,000...

Not signed is not a big deal as long as you can prove intent. All you would need is one person who applied, was denied, and got their money back or one who gave the deposit, was approved, and it was converted to a security deposit. That will prove intent.

That said, I don't think there will be an issue.

did you also pay an application fee?
did you first ASK what their acceptance criteria are to KNOW whether you meet that or not?
do you have ANY reason to believe that you don't or won't meet their criteria?

Honestly, not that worried. The hold fee you describe is a normal amount and it sounds like they handle it in the standard way. You do have paperwork to back up what they told you - even unsigned paperwork is better than nothing. I have personally paid this sort of hold fee several times and never ran into any issues. I don't think the form they gave me with this payment was ever signed, it was more like a receipt and included the terms (i.e. applied to deposit if you take the unit, returned if they deny you, forfeited if you are approved but do not take possession). I would be more concerned if they had given you no paperwork at all or if the fee was unusually high.
