Yes, a manager can/will accept rent from a house sitter (or anyone else) as long as the manager is aware of the situation beforehand. Just write a check like you normally do, but maybe ask your sitter to get a receipt.
If you plan on leaving your unit for a length of time and plan on having someone staying in it, you need to talk with your manager/landlord and let them know all the details. They may or may not allow a house sitter stay in the unit...you won't know until you ask.
