NC will have high humidity for at least three months during the summer, which can also run into September. Winters generally have cold snaps, sometimes with ice and snow, usually lasting a week or two at various times throughout. You can also have warm days in winter, but the wonderful thing is the sky is generally Carolina blue and often sunny. Of course, the mountain area is cooler in summer and colder in the winter.
If you can handle the humidity, maybe the Greensboro or Winston- Salem areas would work? More moderate prices than Raleigh but Durham might be a possibility. All would have excellent medical availability. Lots of bible churches and big enough for a variety of volunteer opportunities. Plenty of parks so walking the dog should be no problem. Good luck!
I would consider all of the Mid-Atlantic states to have humidity. Getting past that, however, I would look hard at Delaware. No income tax, low property taxes, good access to health care and cultural activities. Not too much of a "culture shock" coming from PA.
All the things you describe wanting are pretty much standard fare and are pretty much
available just about anywhere you might want to be. What else do you want in your life?

I always was and am sure always will be single and am pretty much a lone wolf - sharing a place is not something with which I would be at all comfortable, especially as I intend to have multiple dogs for the remainder of my years - until they take me out feet first
I really don't expect much: reasonable quiet, a dependable healthcare service (reputable hospital), an hour or so driving distance to the ocean, perhaps; I've learned to live pretty simply. Thanks for your reply.

Actually did take a look at DE - it's become very crowded as most of the NE has moved there for the low taxes, and they have not improved the infrastructure.

No doubt... and this point tied into my other comments... that it shouldn't be difficult to find someone
companionable (however that might be defined by you) to share those various common amenities with.
More, to do so in a way that affords you to have these common attributes of a life
a) almost anywhere you might like and b) with some degree of financial security.
