Pretty much all of them, pretty much everywhere. Sacramento is one of the most ethnically diverse cities in the country, a statistic that lately gets almost more press than the "most trees per capita" pseudo-statistic.

The ethnic breakdown is roughly thus:

Asians made up 17.4% of the city's population; of which 17.1% were non-Hispanic. Pacific Islanders made up 1.2% of the city's population. Individuals from other races made up 11.6% of the city's population; of which 0.4% were non-Hispanic. Individuals from two or more races made up 4.8% of the city's population; of which 3.2% were non-Hispanic. In addition, Hispanics or Latinos of any race made up 24.8% of Sacramento's population. As of the census[24] of 2000, there are 407,018 people (2004 Est. 454,330), 154,581 households, and 91,202 families residing in the city. The population density is 4,189.2 people per square mile (1,617.4/km²). There are 163,957 housing units at an average density of 1,687.5/sq mi (651.5/km²). The racial makeup of the city is 48.3% White, 15.5% Black or African American, 1.3% Native American, 16.6% Asian, 0.9% Native Hawaiian and Pacific Islander, 11.0% from other races, and 6.4% from two or more races. 21.6% of the population are Hispanic or Latino of any race.
There aren't really any parts of the city that are 100% this or that--since the 1960s and the end of racial exclusion covenants in California, the ethnic makeup of Sacramento neighborhoods is definitely a blend. Generally, though, the farther east you go, the whiter the neighborhoods, with the eastern suburbs of Sacramento County being the whitest, Placer and El Dorado County even more so.

The way the Census breaks that down is a joke.

There are probably more ethnic Russians in Sacramento than there are Native Americans, yet they are lumped in as white.

Non-hispanic vs white: So, if you are from Spain you are counted as hispanic, and not white.

And if you are Jewish, you aren't white.

White is not an ethnic group. Nor is hispanic.

True enough--"white" is an artificial term, one that changes over time. Often, groups got whiter as they came west, or after less-white groups arrived in the country after them. There was a time when Irish, Italians, Portuguese, Jewish weren't considered white, then in different times and places, they were. Ethnic Russian immigrants are considered "white" due to their European origin--whiteness doesn't have much to do with how long one has been in the United States, just as someone newly immigrated from China is considered "Asian" for census purposes, just as someone whose ancestors came from China to California during the Gold Rush is still considered "Asian."

Hispanic isn't considered a "race" for census purposes--it is possible to be Hispanic and white, or Hispanic and African-American, but according to the census nobody is just Hispanic. It's kind of confusing. And yes, these racial categories are largely artificial, based on rather fuzzy concepts about race and culture.

And then, of course, as old taboos (and laws) about interracial dating, marriage and kids have broken down, the picture becomes even more complex. I do notice that as one goes east, ethnic lines are more sharply drawn--it's here in the west where those lines can be drawn more loosely, and often we are the leading edge for change.

I don't see as many people of Japanese ancestry in this area as I thought I would when we moved here. Which is a shame because I have a lot of Japanese ancestry friends in Texas (of all places).
