I have a pair of vintage frames (1920s/1930s) with cable temples (the wrap round the ear type) which I would like to get prescription lenses put into. I'll likely go to Moran Eye Centre for the exam, since I have U of U insurance, but I'm wondering who to go to get the lenses put in [ideally glass not plastic ones] and the frames adjusted to fit me.

Does anyone have recommendations on this? (The closest thing I can come up with is the Spectacle Emporium in Laramie, WY, but I'd rather not have to travel that far!)

The Spectacle, in Trolley Square. The owner is very talented and makes excellent custom eyeglasses (including for many celebrities) out of a variety of materials. I've also seen historic eyeglasses in the shop. If he cannot do what you need, it probably can't be done!

Compared to one of the chain optical stores, it will be pricier. But, that's not necessarily bad. He sells and makes quality products, and backs it up with great service.
