Is there anything else in Jalisco besides restaurants? Judging from how many Jalisco restaurants there are here I would say no...

HHmm...still pretty bad question. It's like, if you are visiting somewhere abroad where the only American thing is fast food restaurants and someone asks you what else other than crappy food and overweight tourists the US has to offer...oh, wait...

Anyway, assuming that was a legitimate question, Jalisco is not a city, but a state. If you spend 5 minutes googling you can find that Jalisco offers many things to visitors, like great architecture, cultural scene, night life, etc. Here in San Antonio you can still enjoy some things: most traditional Mexican music (e.g. Mariachi) comes from Jalisco. Tequila comes from Jalisco. Many dishes like Birria, Tortas Ahogadas come from Jalisco.

Some food critic - the Current or Express-news, a few years ago said that most places that post Jalisco really didn't have that style of cuisine but were standard Tex-Mex.

I forgot which the critic said were authentic.

Waiting for the MacJalisco to hit McD when the MacRib goes away.

Unfortunately, no.

San Antonio is the official "South-Texas, Jalisco, Mexico" capital (of restaurants). I personally don't mind it. I just wish other "Mexican states" could get a little more props than just the Mexican state of Jalisco.

There has to be other notable states down south who can cook food just as good as Jalisco, Mexico, no?!

No, Jalisco style here, whether or not it is considered authentic by natives of Jalisco, is not Tex-Mex. Long time locals who grew up with Tex-Mex will know the difference if they can remember.

Tex-Mex always uses big, fluffy flour tortillas, never greasy, heavy, or from la paquete! Tex-Mex uses sharp cheddar Wisconsin cheese. Enchiladas have orange and not brown sauce in Tex-Mex.

Basically Tex-Mex is an American regional cuisine aka native to the United States. It has much in common with Southern cooking. It uses ingredients that are available locally and do not have to be imported.
