Having tamales for xmas eve dinner.. What side dishes should I have with them?

I'm cooking Chili and mexican rice.. anything else?

Cornbread and make sure to get some pan dulce (sweet bread, duh) just incase you werent sure what that is.

Borracho beans, and tortilla soup. Oh, and hot chocolate, the Mexican kind (Abuelita).

Have you ever tried them for breakfast???

Serve them with Huevos Rancheros (fried eggs with salsa for you northern types) and tortillas and watch your family smile!

chili con queso.

real easy....... 1 lb velveeta, 1 can chili, 1 can rotel. Put in a crock pot and stir occasionally for about an hour. yummy when put over tamales.

This is what we are having too

We are also having Chicken Taquitos, a Spinach Queso (HEB Queso Blanco, Spinach and Rotel) Green Chile Corn (Corn, Cream cheese, butter and green chiles) and lots of guac and sour cream!

We sometimes make enchiladas too, but this year it's just our family and not the extended family and friends so we don't want as much food!

That sounds great -all of it. Hubby and I are from Canada originally (recently moved here) so the thought of having mexican food on xmas eve is a bit foreign to us... But, since I'm tired of cooking a big multi-course meal for our small family of two adults, a toddler and an infant....maybe we'll try something like tamales....

Anyone care to share their recipes with someone very new to Mexican cooking????

Tamales are pretty difficult to make. I tried last year and it was a disaster. I'm not trying to sound "down" about it, but from what I've heard, they're very difficult to make. I'm going to try again this year and hope to get it right. I tried this recipie last year...
