I worked at Olive Garden years ago for about 2 years. From what I remember, they start you off with "easy" tables first (2 and 4-tops in quieter areas) to test you out, so to speak. Once you've proven you can handle it, the managers will start letting you take larger tables in the busier areas that are sat more often. When I started, I made about $50-$70 a night, but by the time I left, I was make $120 -take home- a night on average. Not bad for a 20 year old who only worked about 6 hours a day. Also, that's a another thing to think about. The night shift generally made more money per shift than the day shift. All those soup and salads don't amount to big tickets, and you have to turn your tables fast fast fast.

This system might be similar at any large chain restaurant, so your sister might just need to put in her time before the money starts rolling in. Out of your 2 choices, I would pick Magnolia (I go there fairly often, and the tables turn FAST) if I wanted to work days and Cheesecake Factory if I wanted to work nights.

That lunch shift is what is killing her tips, I remember working lunches at Ruby Tuesday back in '02 and it being a graveyard compared to the 1 hour table waits for dinner. $10-15 checks individual checks versus $50+ party checks made a huge difference. I also was a horrible server, which probably didn't help. :-P

I'd go for Magnolia as they are open only daytime and really busy. Cheesecake Factory is a chain like Olive Garden and they may have their type rules. Use to work at Olive Garden many years ago in CA and they suck. Had to do splits and only had 3 or 4 tables per waiter. With all that bread and unlimited soup it took forever to turn a table. I would imagine even worse here in TX with the low $2 hourly. At Magnolia it is a pretty fast table turn and they seem to hustle.

Honestly I feel for waiters here the $2 hourly is such a insult it works in great advantage to the owner who can afford many servers, then in turn lower the table count for a server. Made $8 hr as waitress in Alaska with one other server I did 8 -10 tables. Made me move fast and make mucho moula
