Hello, everyone. Could someone please be kind enough to share an enchilada recipe that's as good as all the local restaurants? I'm trying to figure out how to make the enchilada sauce (I'm pretty sure it's carne guisada sauce), but every recipe I find online is gross Yankee gringo BS. The canned sauce isn't cutting it for me. I want the taste of the local restaurants without the price!

Try this recipe: The Best Red Enchilada Sauce Recipe - Allrecipes.com It's the most authentic sauce recipe that I've found.

Carne guisada sauce never goes on my enchiladas but your mileage may vary on that. Carne guisada, to me, is more like a spicy brown gravy rather than the distinctive taste of enchilada sauce. I cheat and use canned enchilada sauce on the rare occasion that I make them. For carne guisada, I use Bolner's Fiesa spice mix specifically for carne guisada. I just throw stew meat and some of that in the crock pot for about 8 hours on low and it's good enough for me.

I always just use a can of Wolf brand chili without beans. Try it sometime. Put the chili on the enchiladas, top with some chopped onion and cheese and put them in the oven to heat through. It comes out delicious. Don't know about Jalisco style but this is good old fashioned Tex Mex enchiladas.
