Also besides what is mention in this thread Central Market butcher shop has custom ordered meat in the past, but I do not know what quantity was required.

I often make my sausages at home (it's really not that hard at all, and you know what you are eating) and bring it to Mertz to smoke. But I was told that you can bring it to BBQ places that will do it for a small fee. Have to explore this possibility, because Mertz is all the way across the city from my location.
