Do Hispanics like Cajun/Creole food? What about Greek food? I know hispanics love Chinese foods but what other cusine other than mexican food do they like. Where are the health conscious Mexican restaurant is SA?
I think health related stores like Whole food/Sun Harvest should build on the south and west sides of town. I think this would increase nutrition knowledge for hispanic and help reduce diabetes

I like cajun, thai, greek, indian food as well as mexican food. Your question confuses me, though. Are you asking just to ask or are you asking because you think other ethnic food is healthier?

I don't think as an ethnic group hispanics prefer one kind of food over another... it seems to me to be an issue of personal preference.

If the food is good, the food will sell

Unfortunately, for most on the west and south sides of town, the motivation is cost. Whole Foods and Sun Harvest are a bit pricey for most low-income folks. The Chinese food deal is also cost-based. I'm presuming you're referring to the Chinese all-you-can eat buffets.

My mom would love to have a Sun Harvest on the southside, but, because of the cost, she wouldn't be able to go very often.

I'm hispanic and absolutely HATE cajun/creole. I've rarely had Greek, but I like it. I like Italian, Tex-Mex, American, Vietnamese and Sushi, FWIW. Not a fan of Chinese (at least not the buffet-style... too much salt/sweet/fat)

For the record, I like to pinch the tale and suck the head. There, I said it. Also, the gumbo from DryDock is the best in the city.
