They tell ya breast side up. Don't do it. Breast side down--the fat runs into it keeping it moist.

I always cook mine in a Reynolds cooking bag - I've found that it helps the turkey to retain it's moistness. I also stuff the cavity with celery stalks & quartered onions. I also season it inside and out with lots of salt (coarse sea salt is best); pepper and poultry seasoning. I also add pats of butter inside the cavity and I stick a few under the skin of the breast as well.

This year I'm thinking of brining the turkey. You'll find lots of good advice on Thanksgiving recipes and Turkey brining and other methods on my favorite recipe website: www.allrecipes.com That is one fantastic website for any cook - been using it for years.

Good luck!

I use heat!!!!..................................Why are you asking guys?? It's usually the ladies with those skills. Possible exception of frying them!! Last year my wife cooked our usual great baked Turkey and the kids fried one!! Both were great!! I'd ask her what she does but she just headed back to H.E.B.!! I do know she's been injecting them in recent years!!

It's called..reservations. No heat, no burn, no leftovers, no 500 people you hardly know all over the house. AND..best of all, undoing your pants and laying on the couch when you get home. Love the holidays.
