Technically, yes, that is what barbacoa is made from but you know they don't use the illegal meats anymore. Ever. No way. Not anymore.

There are Culebra Meat Markets on the NE side of SA and the one we go to is great - no we do not buy or even see medication. The other one is not yet open, I dont think. The tacos there are delicious and their meat has always been good when we have purchased it.

Last night I saw a Culebra Meat Market banner hanging in an empty space behind that carwash off of 281 and Encino PKWY.

They should change their name to "Alice's Restaurants". "You can get anything you want at Alice's Restaurant........"

Culebra Meat Market? ugh. We never go there, went once or twice and didn't enjoy the quality of the meat at all. We prefer La Michoacana Meat Market, one off of Fredericksburg, another one off of Culebra. They are, in our opinion, the best Mexican meat market around. Bought $40 worth of meat last week and took it out to Garner State Park to grill it, it was very soft and moist (get the marinated fajita chicken and beef), and the people we invited said they'd never had meat that tasty.

Culebra Meat market obviously sells lower quality beef. The ads for $3.99 Ribeyes drew me in there but the meat was tough...so was the sirloin they had on sale.
I do like the the Tripas, Menudo, Barbacoa, Carnitas and such they sell on weekend morinings...yummm...
