Hello! (Sorry for the limited 'shout out')
I'm visiting your wonderful city to scope it out for a possible relocation. I'll be spending a significant amount of time there and would like to get to know the nightlife...not looking for dance clubs, more low-key: bars, lounges, etc.. I know i'll be hitting the Riverwalk area a couple of nights but if there are other places to check out, please let me know!

Try Gruene Hall outside of New Braunfels, especially on a Fri/Sat night.

Boston Pub in Stone Oak is good. Stone Werks, again in Stone Oak or The Quarry off 281. Klusoz off 281, yet again in Stone Oak. I guess you can pretty much bar hop in that area.

On the Riverwalk, check out Howl at the Moon. Fun piano bar. Swig is good also on the Riverwalk next to Hard Rock Cafe.

SA's a very laid-back place...which I'm sure you've heard. We're just as likely to grab dinner and hang around for drinks afterwords than to go "out" to bars. For what you're (generally) describing, you should check out:

La Tuna
Blue Star
Bethoven Hall
Bar America
Liberty Bar
Mix (on St. Mary's)
Joey's
Web House
Tycoon Flats
Bombay Bicycle Club
The Cove
Mon Ami
Sam's Burger Joint
VFW Post 76 (seriously...it's pretty awesome)
Ten Eleven

These are places near downtown, where I live, so they're obviously the places I frequent. Other posters will be more helpful for suburban places.

Riverwalk is geared towards tourists; few places we frequent in downtown proper, though we do hit up restaurants there from time to time.

I agree with Buffy....stick to these places everything else is hit or miss....usually nights in SA are Thurs/Fri/Sat every other day of the week will be slow....

you might also want to try YARDHOUSE or Kona Grill at La Cantera Mall for good happy hour crowd and specials

That's a great list, dvlpr, but you forgot to mention the perennial St. Mary's standy Limelight. It's hit or miss on the weekends, but it's still pretty hopping on Tuesday and Thursday, at least around midnight (and after). Lava Lounge (right next door) is becoming a cool place for Fridays and perhaps Saturdays as well.
