More authentic Jamaican, Trini, West Indian restaurants
Sweet Georgia Brown I've only been in Detroit but I hear there is a location in Dallas
Thida Thai (Smyrna, TN...great Thai tucked away in this little city outside of Nashville)

purely self serving to our interests/hobbies but...

frys (though it's nice there's at least one in austin)
tap plastics
a better art store, like dick blicks or pearl
in and out (though five guys has been a stellar replacement)
more natural food store (locations) like whole foods and sun harvest. or rather... more grocery stores that aren't walmart or heb would be nice too
EDIT: OH YES and trader joes, like LittleTPot said!

McCormicks - while a chain, it started as a good seafood restaurant in the NW.

A decent Whole Foods as compared to the crappy Quarry one. It's a hole compared to others around the country.

A decent NYC Chinatown style Chinese restaurant - not our buffets and beef with broccoli dens.

More private owned restaurants, creative you know, not chains.
