Thank you all for the input! Since you all took the time to answer me, which I really appreciate, I will answer you back!
First, Julian was not a whimsical choice. We chose it for the relative isolation, the tourist factor, and because we fell in love with the area.
We have considered the quality of utilities, specifically internet, and that will be a considered factor.
Our children are academically strong and financially prepared for college. The scholarship isn't for the money, it is for the team position.
We understand the lack of shopping! We look forward to it (this comes from someone who has lived 60 miles from a major town in the middle of the mountains before).
We have considered the wild-fire thing. We will have the proper insurance, will evacuate at first sign of trouble, and we have a fallback point.

So long as it's not in the City limit you can hunt on your own land. Also, see this map and you'll see the preserve you cannot hunt on(State Park). There is good Turkey hunting there. Maybe you need someone to show you the ropes Especially if you have 8 acres.

I can think of places with much higher fire risk than Julian (e.g. places packed with chaparral). Julian is more of a pine and oak woods area with significant cleared areas, which on the scale of things is not as bad as dense and steep chaparral.

My wife and I just moved to Ramona. We have two young children, and we like it a lot. In this town, I'm sure you could find the type of setting you're looking for in Julian. Plenty of horses here. Recently put in new artificial turf on their football field, and the sports/academic programs are in solid financial shape.

Julian would be a good hour, maybe more, from SD. In Ramona, you're about 40 minutes, but many things can be had in town.
