A bit sad? Does that mean you don't eat Asian food outside of Asia, Mexican food outside of Mexico, etc.?

My $.02 about the Bay Area food scene:

I am a fan of good pizza, good sanwiches, good food done well, no matter it's origins. From my experience, the Bay Area has some of the best, if not the best food in the country. Location to source and ethnic diversity is key. For that, I would say I am lucky to enjoy that.

How about not ordering dim sum outside of Hong Kong or sushi outside of Japan?!

Let's say that I eat French cuisine at any good French restaurant, but I WOULDN'T eat the one very specific dish indigenous to a small French town anywhere but that small town.

This logic is kind of absurd when you consider that most people that operate these types of restaurants in San Francisco are actually natives of the towns whose food they serve. Most people in SF that own places that serve NYC Style Pizza, Philly Cheesesteaks, Southern BBQ, etc...are from New York, Philly, the South, etc....(quick example, the folks that own Giordano brothers are from Pittsburgh)

Its not like they forgot how to make a cheesesteak once they moved across the country.

Problem is that for pizza and bread, it's all about the local water.

It's just that there are some things that are so specific to a given place, they just don't work anywhere else. You could have decent BBQ anywhere, but outside of the south the hushpuppies are going to suck. Maybe you can make good "fried cornbread", but it's not gonna be a real hushpuppy, know what I mean?
