They are actually some sort of Ashkenazi invention as I understand it. I can't imagine people in the Levant ever creating anything like them. Still, I have been a fan since early childhood.

It's good to know there's some real bagelries finally opening in the Bay. The closest thing to an authentic bagel I could find was Manhattan Bagel on Fourth Street in Berkeley (formerly Holey Bagel, which also had a location on Ashbury in SF). None of the others had that crispy outside and chewy center, especially Noah's "New York Bagels", which are overpriced steamed hamburger buns.

Wish I'd been able to try some of these before I moved south. Katz's in SF was always a very tasty bagel for me but I'd like to see what a "same as NYC" bagel would be like since I've always loved bagels a bit too much for my waistline.

Not quite the same thing but you can get these all over Israel from Arab and Jewish hawkers on the street, and I believe in Arab countries as well:

Basically bread baked in a circle, definitely not the same as a bagel but a similar concept. I wouldn't be surprised if bagels came from these, or vice versa.

I've never been to NY ... But had NY Bagels somewhere at some point. Aren't real bagels boiled/cooked in water and then baked?

Just curious.

Good article, good bagels. The Article fails to mention Authentic Bagel on Jack London Square Oakland which in this ex NYer's opinion is the tastiest, crunchiest and has the most condiments than all the other new local products.

Maybe I just went to the wrong places, but I never found NY bagels to be anything amazing. House of Bagels has been operating in San Francisco long enough my mom used to go there when she was a kid, and Main Street Bagel has been around for I have no idea how log in San Leandro. I'm not sure you can have enough good bagel places, it's just the tone of the article rubbed me.

Kinda like NY pizza... yeah, it's cheap as hell but's also quite possible the nastiest pizza I've ever had that wasn't Little Caesars. Again, probably went to the wrong ones but surprising in a city that prides itself on its street food that pizza that awful can even stay in business.
