Green chile is very popular in NM, so perhaps some chile candy? I can't tell... are you located in Santa Fe? If yes, head over to the 5&Dime on the Plaza. They have tons of candy and goodies that are good representations of NM treats.

Cactus candy... Candy is made from the pricky pear cactus. Yes it is real. It has a lot of sugar...

There are great children's books with southwest themes. Alice Nizzy Nazzy: The Witch of Santa Fe is a fun one. Another one: Baby Rattlesnake. They would be for the 7 year old. Look in any of the bookstores here for the older boy. Jackaloupe's is also a good place to look--interesting beads and rocks. A beading craft kit would be fun. Or rocks of the southwest or a book on petroglyphs.
