We had never heard of it until we had it in a restaurant last year. I just bought some fresh at one of the fish markets today, and it is really great. I think the season is limited.

I have caught a lot of Cobia in the Florida keys but never eaten it. I was always told it was "too gamey".,
Maybe THEY wanted to eat it??

Most likely they wanted to sell it.

There's a narrow steak of red meat that has to be trimmed out. Afterwards, it's excellent.

The pieces I bought we almost square blocks. Next time, I will most likely butterfly the pieces so they cook faster. It was very mild tasting, kind of like halibut or swordfish.
