One should stretch pizza thin (101 pizza making) but the restaurant biz is another story.

We finally went to Mellow Mushroom.... there was no place to park, so we got carry out. A medium pizza was $21.00, and it was just OK.

Italian pizza usually doesn't have much sauce or many toppings. It's more of a flat bread with a few blobs of cheese, fresh tomatoes and basil leaves. The flavor binder is olive oil rather than red sauce -- usually.

Default smoky tasting pizza

Maybe some other pizzas in brick oven got burned when yours was cooking. A brick oven alone should not cause a pizza to taste smoky.
