From what I understand, there are attempts under way to develop ways to beat these systems too, a few seem to be pretty effective.

They won't necessarily need facial recognition. Body motion may work as well; the Chinese are already deploying 'gait recognition'.

Yes, a student who was paid to demonstrate at HK, was picked up and disciplined even though he was wearing a face mask(probably one of the nose/mouth ones). This suggests they have gait recognition plus ... as well as face recognition. He was stopped from leaving the country and since he came from the mainland, he could not continue his studies in HK.

You are right, right now the Chinese incorporate thermal imaging cameras to help spot people with elevated temperatures.
I am sure that in addition to face recognition/retinal scans and finger prints there are other biometrics in use to authenticate a person.

Hand geometry recognition, palm vein , ear and voice recognition, DNA, behavioral identifiers, physical movement - known as RF-Pose, can reveal whether someone is walking, sitting, standing or even waving — and can identify individuals.
There is intelligent radar-like technology that makes it possible to see through walls to track people as they move around.
Walking speed and ability to do basic activities on their own gives health care providers a window into patients lives.
And there are probably many other ways that are already used, or could be used, and we will never find out about...
